Delicious Tomato Bread

A favourite recipe of my cousin-in-law, Dianne.
I've have made this recipe by substituting the biscuit mix with a from scratch biscuit recipe.

1 cup buttermilk biscuit mix
1/3 cup milk
2 large tomatoes, sliced
1 tbsp. butter
1 medium onion, chopped
1 clove garlic, minced
1/3 cup sour cream
3 tbsp. mayonnaise
1/2 cup shredded aged cheddar cheese
1/2 tsp. salt
1/8 tsp. ground oregano
dash each of ground sage, paprika, pepper


Combine biscuit mix and milk.  Mix to form dough.
Pat into an 8" or 9" square pan pressing dough up the sides to form
a shallow rim.  Place tomato slices onto of dough.

Melt butter in fry pan and add onion and garlic.  Saute until translucent.
Add remaining ingredients and spoon over tomato slices.  Sprinkle with
a little extra paprika if you like.

Bake at 400F for 20-25 minutes.  Let stand 10-20 minutes so it will cut easier.
